      Milwaukee's Newest Dining Destination - Eldr+Rime - Now Open

      Concord Hospitality Enterprises, in collaboration with the Fifty/50 Restaurant Group, today announced the official opening of its newest restaurant, Eldr+Rime, 2300 N Mayfair Rd., Wauwatosa. Located on the bustling Northwest side of the town, Eldr+Rime is led by Executive Chef Gary Baca and features New American cuisine with nods to Scandinavian flavors and traditions. The modern dining destination has a spacious and socially distanced full dining room, full-service bar, bar with seating in front of the open kitchen, two private dining rooms and an outdoor patio, which together encompasses 6,800 sq. ft. With guest and staff's well-being on the top of its priority list, Eldr+Rime begins service with several safety guidelines, in accordance with local directives and recommendations.

      Eldr+Rime, which translates to "fire and ice," presents a seasonally focused menu and inspiration from Northern European taste that ensures every dish is fresh. Cooking techniques at Eldr+Rime highlight grilling over live fire, and wood oven roasting. The restaurant leverages the seasonal ingredients to full capacity with fresh preparations, along with preserving, pickling and smoking. The menu includes several delectable starters, salads and entrees. The extensive beverage menu also riffs off Scandinavian culture and offers a variety of specialty crafted cocktails and an elaborative wine list that includes handpicked varieties by the sommelier, which pay homage to an array of regions.

      Starter standouts include Swedish Meatball Sliders comprised of Lingonberries, house pickles, grain mustard and potato buns, Potato and Spelt Dumplings featuring Clock Shadow cheese curds, chive skyr, crème fraiche and dehydrated strawberry jam, Venison Tartar with blueberry aigre-doux, smoked and picked spring onion, quail egg and a beer raised waffle and Nordic Rye Flatbread with honey butter, Icelandic sea salt, herbs, flowers and skyr. Eldr+Rime's entrees come from both land and sea with dishes such as Miso Glazed Oyster with whipped crème fraiche, coriander and lime, Coal Roasted Alaskan Red King Crab served with herb butter and charred lemon, Pork Schnitzel featuring red endive, black radish, beer vinegar pearls and fried egg, a 32-ounce Tomahawk Ribeye with mushroom rub, crispy smashed fingerlings, sweet chilis, smoked horseradish and aged vinegar, and more.

      At the Eldr+Rime bar are several additional dishes including Pretzel "epi" Baguette with Spotted Cow beer cheese, beer mustard and beer jam, Wood Fired Wings with Artic Thyme sea salt, birch syrup, charred scallion and rosemary and a Danish Style Hot Dog featuring a Bunzel's Natural beef hotdog, curry remolade, apple ketchup, pickled red onion, crispy shallots and a potato bun.

      Available at the bar and throughout all dining areas of the restaurant, Eldr+Rime's craft libations include distinct concoctions like Birch Sour, Scandinavian G&T and Thyme for the Bramble. In a true nod to one of Wisconsin's most notable cocktails, Eldr+Rime serves a special twist on an Old Fashioned with the Gufa Old Fashioned.

      Coming to Milwaukee and Eldr+Rime from Chicago's western suburbs, Executive Chef Gary Baca has expertly led several restaurants over his career spanning more than two decades. Specializing in steak, seafood and progressive American cuisines, Baca most recently worked at Michael Jordan's Steak House and has previously been the Executive Chef and Partner at Lettuce Entertain You, overseeing culinary operations at Chicago's Joe's Seafood, Prime Steak & Stone Crab, Scoozi and more. A La Cañada Flintridge, California-native, Baca studied at Santa Barbara City College and University of California, Berkeley.

      Executive Sous Chef Alex Lyskowicz joins the Eldr+Rime team after previously serving as the Executive Chef at the Iron Horse Hotel. While there, Lyskowicz oversaw all food and beverage outlets at the hotel as well as offsite catering and events. Chef Lyskowicz specializes in rustic wood-fire cooking and Wisconsin farm-to-table cuisine.

      Eldr+Rime's design is courtesy of Simeone Deary Design Group. In an ode to land and rustic natural environments with emphasis on Scandinavian simple well-crafted design, the façade of Eldr+Rime evokes images of a modern barn, filled with large wooden tables, chairs and benches. The space is filled with warm tones of light birch and oak wood set against a backdrop with layers of textures from knit sweaters, tile details and greenery. The large bay windows in the dining room ensure the land can be seen and is an active participant in the ambience of the space. With fireplaces abound and ample outdoor seating complemented by the color palette, which juxtaposes contemplative blues with fire-roasted reds, guests are invited to experience harmony of the senses and hygge incorporated throughout the restaurant, both indoors and outside.
